Girl Scout Lemonade Pie

So, Thanksgiving is upon us and my mind has been reeling trying to figure out what I will be making for dessert that day.....well I have figured it out.
This my friends is a Girl Scout Lemonade Pie
 
It is melt-in-your-mouth delicious, and  it leterally took me 10 minutes to prepare.
 
Here is the recipe:
 
For the crust:
1 Box of Girl Scout Lemonade Cookies
1 Stick of Butter - melted
 
For the filling:
1 Box of Lemon Pudding Mix
1 & 3/4 Cups of Whole Milk
 
For the topping:
1 Carton of Whipped Cream Topping
1 Lemon Slice
 
These cookies really are the star of the show here.  They make this pie extra special.  It is not your run of the mill Lemon Cream Pie.
Crush one box of Lemonade Cookies.  This can be done in a ziploc bag with a rolling pin, or pulsed in a food processor.
Add the crushed cookie crumbs into a bowl with one stick of melted butter.
Press the wet cookie mixture into a pan. I used a disposible cake pan, but you can use a pretty pie plate as well. It does look a little too wet at this point, but never fear, the butter and glaze on the cookie will set up magically, creating a beautiful crunch for your pie.
In another bowl, combine your pudding mix with your whole milk.  Please do not attempt to skimp on the fat and use skim or 1%.  You will not do your pie justice.  Besides, it's Thanksgiving.  You are totally allowed to splurge.  I promise.
After the pudding sets up for a few minutes, pour it on top of your cookie crust and spread evenly.
Be sure your whipped topping is completely thawed and spread it on top of the lemon filling.  Then top your pie with a pretty lemon slice.  A grating of lemon zest would be lovely as well.

Chill in the refridgerator for at least 2 hours, then enjoy!

from 10:00 a.m. until 4:00 p.m.
